Ingredients: 1 bunch of asparagus, trimmed and cut into 2-inch pieces. 8 ounces of pasta your choice, cooked and drained. 4 cups fresh spinach leaves. 1/4 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 1/4 cup feta cheese, crumbled. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Preheat your oven to 425F 220C. Place the trimmed asparagus pieces on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat evenly. Roast the asparagus in the preheated oven for 12-15 minutes or until they are tender and slightly caramelized. Remove from the oven and let cool.
