Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp salt. 1/2 cup milk. 2 large eggs. 2 tbsp unsalted butter, melted. 1 tsp vanilla extract. Oil for frying. For the glaze:. 1 cup powdered sugar. 2 tbsp milk. 1/2 tsp vanilla extract. For the macarons:. 6 macaron shells store-bought or homemade. 1/4 cup royal icing for attaching macarons.
Instructions: In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until a dough forms. Turn the dough out onto a floured surface and roll it out to about 1/2-inch thickness. Use a donut cutter to cut out donut shapes and place them on a baking sheet lined with parchment paper. Heat the oil in a deep fryer or large, deep skillet to 350F 175C. Carefully add the donuts to the hot oil and fry until they are golden brown, about 2-3 minutes per side. Remove the donuts from the oil and place them on a paper towel-lined plate to drain excess oil. In a separate bowl, whisk together the powdered sugar, milk, and vanilla extract to make the glaze. Dip each donut into the glaze, allowing any excess to drip off, and place them back on the parchment paper to set. Once the glaze has set, gently attach a macaron shell to the top of each donut using royal icing. Allow the icing to dry and the macarons to adhere to the donuts.
