These Flower Pot Cookies Cupcakes are a delightful treat for spring. They combine the flavors of a classic cupcake with the whimsy of a flower pot cookie decoration. Perfect for garden parties and spring celebrations!
Ingredients: 1 and 1/2 cups all-purpose flour. 1 and 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup whole milk. 1/4 cup crushed chocolate cookies for the 'dirt'. 12 small flower-shaped cookies for decoration. Green buttercream frosting. Assorted colorful sprinkles.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Whisk the flour, baking powder, and salt together in a bowl. Mix the softened butter and sugar in a different bowl until the mixture is light and fluffy. One at a time, add the eggs and beat well after each one. Add the vanilla extract and mix well. Slowly add the dry ingredients to the wet ingredients, mixing in the milk every so often. Mix the dry ingredients in at the beginning and end, until they are just combined. Fill up about two thirds of the way to the top of each cupcake liner with the batter. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Let the cupcakes cool for 5 minutes in the muffin tin, then move them to a wire rack to cool all the way down. Put a thin layer of green buttercream frosting on top of each cupcake to make it look like grass after the cupcakes are cool. To make the "dirt" layer, sprinkle the crushed chocolate cookies on top of the frosting. Put a flower-shaped cookie in the middle of each cupcake and gently press it down into the "dirt." Add some color to the cupcakes by decorating them with sprinkles. This spring, your cute Flower Pot Cookies Cupcakes are ready to make everyone happy.
