My annual apple pie baking fest has begun! I went to @bluejayorchards and bought myself a bushel of Rhode Island greening apples (which my mother said were the best for pies and she was correct!) and started. Finished 2 regular size pies and 3 smaller ones. All for the freezer. I always make enough pies to last one year and then start over again when the fresh apples are ready. I’ll continue baking during the week. My house smells divine. My pies are not beautiful or glamorous. My mother always told me that gorgeous crusts may look fabulous but they’re never tender and flaky enough because the dough has been “played with” too much. Her famous warning: “don’t kill the dough!” I don’t, hence the homey looking pie. Let me brag though — my pie tastes really really good and the dough is perfect on the tongue.
