Ingredients: 8 ounces pasta. 1 cup fresh or frozen peas. 1/2 cup Boursin cheese. 2 tablespoons olive oil. 2 cloves garlic, minced. Salt and pepper to taste. Grated Parmesan cheese for topping. Fresh chopped parsley for garnish.
Instructions: Cook the pasta according to package instructions. During the last 2 minutes of cooking, add the peas to the boiling water. Drain the pasta and peas, reserving 1/2 cup of pasta water. In a large skillet, heat olive oil over medium heat. Add minced garlic and saut until fragrant, about 1 minute. Add the cooked pasta and peas to the skillet. Stir in the Boursin cheese until melted and creamy, adding reserved pasta water as needed to loosen the sauce. Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese and fresh chopped parsley.
