Martha's Toasted Parmigiano Omelet

Something I read about in dear Rachael's dinner diary. My cheese crust doesn't look nearly good as hers (or Martha's, I'm guessing), but stuffed with McGrath Family Farm's sprouting broccoli, it made quite a tasty second breakfast.

Sprouting broccoli is my favorite limited edition vegetable. Sweet and tender, with a way too short late winter season, some say it's the one true broccoli. (And that calabrese is for babies.)

If there's ever a broccoli round at trivia night, I'm going to throw down.
