Trombetta Goulash
Sound the trumpets for trombetta squash...beautiful and bizarre looking all at the same time. It's a beautiful veg colored with the light peach/green striping and a graceful, elongated neck. Passed onto me by a generous fellow swimmer, this gift gave me the opportunity to experiment so I started off with a tomato based goulash. It's hearty, would be good also with cooked ground beef added, and reheats well to cook once to then serve multiple times later in the week. Give it a try...
1 med. onion, diced
2 t. garlic, minced
1 c. carrots, sliced thin into rounds
2/3 c. olive oil
1 - 1/2 c. trombetta or zucchini squash, with skin, chopped
1 - 14.5 oz. can crushed tomatoes with liquid
1 - 15 oz. can Great Northern beans, drained
4 c. vegetable broth
2 t. salt
2 t. pepper
1 t. paprika
2 t. Italian herb mix
1 c. fresh green beans, cut using kitchen scissors to speed the process
1 c. dry whole wheat rotini pasta, uncooked
1 T. dried parsley
In a large deep fry pan, saute onion, garlic, carrots and squash in olive oil. When onions are caramelized, add tomatoes, beans, vegetable broth, salt, pepper, paprika, Italian herb mix, green beans, pasta, and parsley. Simmer until pasta is tender - 20 - 30 min. Serve up with a crisp green salad on the side and melon for dessert. See what you think...
