Ingredients: 1 sheet of frozen puff pastry, thawed. 1 small butternut squash, peeled, seeded, and thinly sliced. 1 head of garlic. 2 tablespoons olive oil. Salt and black pepper to taste. 1 cup shredded mozzarella cheese. 2 tablespoons grated Parmesan cheese. Fresh thyme leaves for garnish.
Instructions: Preheat the oven to 400F 200C. Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes, until cloves are soft and golden. Remove from oven and let cool.
