I’ve battled with squirrels a bit but normally they would go after my sunflowers just before I was ready to harvest them or sometimes they use to dig up my spider plants and eat their roots. I find that with garden pests you generally have three options: cover, distract, or dissuade.
My garden back when I lived with my family had an orange tree off to the side and because of that the squirrels didn’t bother my plants unless there was something exceedingly tempting to them (sunflower). They would leave half eaten oranges everywhere, but at least I didn’t lose many things to them. That would be a “distract” method. You might accomplish this potentially by giving them food in the furthest area of your garden from your plants, but this method miiiight backfire.
I don’t know of many dissuasion methods for squirrels as they tend to be a bit relentless and I don’t know of any plants they dislike. If you want to try dissuading them though, do some digging into scents they hate or fear and see what you could do there.
You said you don’t want to cover your seedlings/seeds but honestly, that’s probably your best bet. I use to keep some of my plants in what was essentially chicken wire cages, and a lot of the people at the community garden I’m currently with do the same. It’s probably the best bet against things like birds and rodents (assuming the holes are small enough). I attached a photo of part of the cage thing I set up to deter turkeys which often hang around the garden. I hope I helped, or at least gave you some ideas.

Why?
There’s a squirrel in the bathroom. Specifically the toilet.
I’m not kidding. And I’m lucky because my fiancee was there. He helped my dad extract the squirrel and return it to the “wild” of my neighborhood.
We’re still trying to figure out how the squirrel got there. Where is not so much an issue. I think it probably came from the tree we cut down within the last week.
I have stomped and pounded and screamed at the top of my lungs in every animal vernacular I can conjure and I cannot get this goddamn squirrel to stop chewing my house and leave.
There was this squirrel that wouldn't stop yelling for whatever reason right outside my door so I stood on my porch and stared at it and yelled back until it stopped. Success!
