Gateau St-Honore as the 88th bake from the 2016 Great British Bakeoff cookbook. I did postpone this for a long time, as it seemed so hard. Puff pastry, choux pastry, piped and filled, creme st-honore, piped cream chantilly and caramel and sugar spunning. It actually turned out better than I expected. I think the creme st-honore should have been more solid and I also overfilled the ring, so it leaked out a bit after I piped the creme chantilly on top. I will also start with the creme st-honore next, maybe even the night before as I missed the 4 hours-overnight chilling time when I peeress the recipe. It starts with the puff pastry and choux pastry and baking them, then doing the creme and chill it for 4 hours.
Some desserts from the past few weeks in my European Tortes class!
First is an Black Forest Cake, garnished with whipped cream and cherry chocolate sauce.
Next to it is the Opera Torte, garnished with coffee buttercream, chocolate decal, and Créme anglaise
Then there is the Sacher Torte, garnished with a spiced orange sauce, whipped cream, and chocolate decal
Next to it is a Charlotte Russe, garnished with whipped cream, fresh raspberries, and chocolate cigarattes
And then finally we have a Gâteau St. Honoré, garnished with pâte au choux, raspberry sauce, and caramel sauce!

Artelice Patisserie opened its first location on the Westside of LA. Specializing in fine modern French pastries, they bake a wide variety of sweet and savory croissants, macarons, eclairs, and cakes. The cakes are mini works of art and they seem to taste as good as they look (based on my sample size of 1). They have lovely boxes for your treats too.
Spanish princess croissant ($4): A flat, round croissant with a layer of leeks and parmesan. Really good – creamy leeks meet thin, buttery, crunchy layers of croissant. On the small side.
Saint Honore ($8.50): Whoa, this was mini version with mini profiteroles filled with lots of rich but not too sweet cream and topped with a crispy layer of caramelized sugar, surrounding a different type of thick cream and on top of a crispy circle of puff pastry. So amazing.
Macarons ($2 each): On the smaller side, but nice. The cookies and cream macaron was light and delicate, with a chewy cookies and creamy filling. The chocolate caramel one was chewier and firmer with a nice hint of salt. The vanilla one had a very mild vanilla flavor. The orange one had a lovely orange curd filling.
They just opened. The space looks white, clean and elegant. They serve coffee and have some bottled drinks. Service was polite and friendly.
