Pork loin roast stuffed with fresh mushrooms, garlic, kale and seasonings. My therapy right now. It has been a rough week. I need to be distracted for a few hours. Never underestimate a cook whose a vegetarian. I do not eat meat, and it's been years since I have. If my husband was a vegetarian I would probably never cook it. But since that's not possible, it's almost like a respect thing in the kitchen. A man who I competed with at Master Chef last year taught me a lot. He hunted everything he cooked for his family. We passed the first round together and had time to talk about our lives. When he would hunt, he would say a prayer and give thanks for the animals. Which I admired and continue to do every time I cook meat for my husband, family or friends.
