These Slow Cooker Steak Burritos are packed with tender, flavorful steak and veggies, all cooked low and slow for maximum flavor. They're easy to assemble and customize with your favorite toppings.
Ingredients: 1.5 lbs flank steak, sliced. 1 onion, sliced. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 can 14.5 oz diced tomatoes. 1 can 4 oz diced green chilies. 2 cloves garlic, minced. 1 tsp cumin. 1 tsp chili powder. Salt and pepper to taste. 8 large flour tortillas. 1 cup shredded cheese. Optional toppings: sour cream, guacamole, salsa.
Instructions: In the slow cooker, layer the sliced flank steak, onion, bell peppers, diced tomatoes, green chilies, and minced garlic. Season with cumin, chili powder, salt, and pepper. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the steak is tender. Once cooked, shred the steak using two forks. Warm the flour tortillas. Assemble burritos by placing some of the shredded steak mixture onto each tortilla, topping with shredded cheese, and any optional toppings. Roll up the tortillas, tucking in the sides as you go. Serve hot and enjoy!
