The store-bought versions of enchilada sauce are not as tasty as this homemade, Paleo version. Made with healthy ingredients like tomato paste, spices, and coconut oil, it's ideal for giving your favorite Paleo enchiladas a flavor boost.
Ingredients: 2 tbsp coconut oil. 1/4 cup finely chopped onion. 3 cloves garlic, minced. 1 tbsp chili powder. 1 tsp ground cumin. 1/2 tsp dried oregano. 1/4 tsp paprika. 1/4 tsp cayenne pepper optional for extra heat. 1/2 cup tomato paste. 1 1/2 cups chicken or vegetable broth. 1 tbsp apple cider vinegar. Salt and black pepper to taste.
Instructions: Coconut oil should be heated over medium heat in a saucepan. Add the onion and garlic, and saut until they become soft. Add the cayenne pepper, paprika, oregano, cumin, and chili powder and stir. Whisk in the broth and tomato paste until smooth. Simmer until the sauce thickens, ten to fifteen minutes. Add the apple cider vinegar and taste and adjust the salt and black pepper. Let cool after removing from the heat and using in enchiladas.
