Always look forward to getting to "Stealth Strike" during my rewatches!
It's hard to narrow down, but here are my top 3 favorite moments (in no particular order):
1. Ezra stunning Rex and Kanan - and their reactions
Rex [laughing]: You shot us!
Ezra: I set it to stun.
Rex: Yeah, well, you should have used 'kill.'
Kanan: WHAT?!?
Rex: Well, just in case it wasn't us, I mean...
2. This entire sequence:
Especially the look of sheer disappointment on Ezra's face when Chopper does it anyway:
3. ALL of Rex's complaints about the stormtrooper armor, but especially this part:
The fact that Rex, upon removing the helmet, chucks it down the hall and nails the trooper right in the face with it before following up with a well-aimed blaster shot, is my favorite detail of this scene (and also is one of my favorite headcanons in general explaining why some stormtroopers don't shoot well).
Also just feel the need to point out that our captain is still strong enough to knock the trooper over with that helmet throw. (For comparison: I work out regularly and can confidently say that helmet wouldn't have made it even halfway down the hall had I been throwing it, much less had enough speed and power behind it to knock someone over 😂)

I watched Stealth Strike earlier and I think it's so funny how many Imperials not regularly stationed in the Lothal Sector doubts Kallus(And also Tua back when she was around) when it came to the rebels and ESPECIALLY Ezra. It's not surprising but it's so funny.
It happens time and time again. The Inquisitor, and then Tarkin showed up to roast the original three Imperials at failing to catch the Rebels. Then Vader. Other Inquisitors. Thrawn's the only one that stood a chance. And they belittled Kallus, didn't heed his warnings.
But the Rebels always escaped. He warned Titus to give Ezra triple guards and Titus was like "He's just a child! A mere boy cannot overpower the Imperial navy!" His three stormtroopers couldn't even get Ezra into his cell. Kallus knew Ezra is nothing like a child and showed up with a smirk to see Titus' ship blown up.
It's actually notable with how Kallus ends up defecting. Even Sato doubts Ezra in that episode, but Kallus doesn't-not anymore. He had faith in Ezra like the rest of the Spectres, the rest of them that was there from episode one, seeing him grow from a street loth rat to a Jedi Padawan that few sees his true potential. But Kallus does, and he warns his fellow Imperial, who hates to see he was right.
Ezra and Kal's relationship is something super interesting and I'm sad that unlike Kal and Zeb/Hera/Sabine/Rex/Jacen, there's no space to explore them post series until at least 10 years after Rebels ends(Or whenever Sabine brings him home to Lothal).
