This hearty beef stew is infused with the rich flavor of Guinness beer and paired with savory gluten-free garlic cheddar dumplings. It's a comforting dish perfect for chilly evenings.
Ingredients: 1.5 lbs beef stew meat, cubed. 2 tbsp olive oil. Salt and pepper to taste. 1 onion, diced. 3 cloves garlic, minced. 2 carrots, sliced. 2 celery stalks, sliced. 1 cup Guinness beer. 2 cups beef broth. 2 tbsp tomato paste. 1 tsp dried thyme. 1 tsp dried rosemary. 1 bay leaf. 1 cup gluten-free flour. 1/2 cup shredded cheddar cheese. 1/2 tsp garlic powder. 1/2 tsp baking powder. 1/2 cup milk. 2 tbsp butter, melted.
Instructions: Add salt and pepper to the beef. In a big pot, heat the olive oil over medium-high heat. Slowly brown the beef and set it aside. You can put the onion, garlic, carrots, and celery in the same pot. Cook until it gets soft. Put the beef back in the pot. Add the beef broth, tomato paste, thyme, rosemary, and bay leaf. Bring to a low boil. On low heat, cover and cook for 1.5 to 2 hours, until the beef is soft. Gluten-free flour, cheddar cheese, garlic powder, and baking powder should all be mixed together in a bowl. Pour in the milk and melt the butter. Mix it in until a dough forms. Put pieces of the dough into the stew with a spoon. Put the lid back on and cook for another 15 to 20 minutes, or until the dumplings are fully cooked.
