Ingredients: 1 cup dried lentils. 1 onion, finely chopped. 2 cloves garlic, minced. 1 carrot, diced. 1 celery stalk, diced. 1 can 14 oz diced tomatoes. 1/2 cup corn kernels. 2 cups vegetable broth. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Rinse the lentils under cold water and set aside. In the pressure cooker, heat olive oil over medium heat. Add chopped onion and garlic, saut until softened. Stir in diced carrot and celery, cook for an additional 2 minutes. Add rinsed lentils, diced tomatoes, corn kernels, vegetable broth, thyme, rosemary, salt, and pepper. Secure the lid on the pressure cooker and cook on high pressure for 10 minutes. Once done, release the pressure naturally for 5 minutes, then do a quick pressure release. Adjust seasoning if necessary and serve hot. Garnish with fresh herbs or grated cheese if desired.
