This Sesame Shrimp Stir-Fry with Spinach is a delicious and healthy meal packed with vibrant colors and flavors. The sesame-infused sauce adds a delightful twist to this classic stir-fry, making it a perfect weeknight dinner option.
Ingredients: 1 lb large shrimp, peeled and deveined. 2 tbsp sesame oil. 3 cloves garlic, minced. 1 inch ginger, minced. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 5 cups fresh spinach leaves. 2 tbsp soy sauce. 1 tbsp rice vinegar. 1 tbsp honey. 1 tsp cornstarch. 1/4 cup water. 2 tbsp sesame seeds. Salt and pepper to taste.
Instructions: In a small bowl, mix soy sauce, rice vinegar, honey, cornstarch, and water to create the sauce. Set aside. Heat 1 tbsp sesame oil in a large skillet or wok over medium-high heat. Add shrimp and stir-fry for 2-3 minutes until they turn pink. Remove shrimp from the skillet and set aside. In the same skillet, add the remaining 1 tbsp sesame oil and heat it up. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant. Add sliced red and yellow bell peppers and stir-fry for 2-3 minutes until they start to soften. Add fresh spinach leaves to the skillet and stir-fry until they wilt, about 2 minutes. Return the cooked shrimp to the skillet and pour the sauce over the ingredients. Stir-fry everything together for an additional 2-3 minutes until the sauce thickens and coats the ingredients. Season with salt and pepper to taste and sprinkle sesame seeds over the stir-fry. Serve hot and enjoy!
