A hearty and comforting vegan version of the classic Hamburger Helper, made in one pot for easy cleanup.
Ingredients: 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 zucchini, diced. 1 cup vegan ground beef substitute. 1 cup elbow macaroni. 2 cups vegetable broth. 1 can 14 oz diced tomatoes. 1 tablespoon tomato paste. 1 teaspoon paprika. 1 teaspoon dried oregano. Salt and pepper, to taste. 1/2 cup vegan shredded cheese, optional. Fresh parsley, chopped, for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the garlic and onion, and cook them until they get soft. Put in the vegan ground beef substitute, bell pepper, and zucchini. Cook until the vegetables are soft. Add the vegetable broth, diced tomatoes, tomato paste, paprika, oregano, salt, and pepper, and stir them all in. Bring to a boil, then lower the heat and simmer, stirring every now and then, for about 15 to 20 minutes, or until the pasta is done and the sauce has thickened. If you want to, top it with vegan shredded cheese and let it melt. Before serving, sprinkle with fresh parsley.
