Learn the secret to making pizza dough that is crispy and tastes like it came from St. Louis. With this dough recipe, you can make a thin, crispy crust that you can then top with your favorite things.
Ingredients: 2 1/4 teaspoons active dry yeast. 1 teaspoon granulated sugar. 1 1/2 cups warm water 110F / 45C. 3 cups all-purpose flour. 1/2 cup cake flour. 1/2 teaspoon salt. 1/4 cup vegetable oil.
Instructions: In a small bowl, combine the active dry yeast, sugar, and warm water. Let it sit for 5-10 minutes until it becomes frothy. In a large mixing bowl, whisk together the all-purpose flour, cake flour, and salt. Make a well in the center of the flour mixture and pour in the yeast mixture and vegetable oil. Using a wooden spoon or your hands, mix the ingredients until they come together into a dough. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for 1-2 hours, or until it has doubled in size. Preheat your oven to 475F 245C and place a pizza stone in the oven while it heats up. Punch down the risen dough and divide it into two equal portions for two pizzas. Roll out each portion into a 12-inch circle on a lightly floured surface. You can also make smaller individual-sized pizzas if desired. Transfer the rolled-out dough to a piece of parchment paper for easy transfer to the hot pizza stone. Add your favorite toppings to the pizza dough, leaving a small border around the edges for the crust. Carefully slide the parchment paper with the topped pizza onto the hot pizza stone in the oven. Bake for 10-12 minutes, or until the crust is golden brown and crispy. Remove the pizza from the oven, let it cool for a minute, then slice and enjoy!
