For St. Patrick's Day, these vegan shamrock cookies are perfect! They taste great and are soft, buttery, and sweet with a hint of chocolate.
Ingredients: 2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup vegan butter, softened. 3/4 cup sugar. 1/4 cup unsweetened applesauce. 1 teaspoon vanilla extract. Green food coloring. 1/2 cup vegan chocolate chips.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, cream together the vegan butter and sugar until light and fluffy. Add the applesauce and vanilla extract to the butter mixture and mix well. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Add green food coloring to the dough until desired color is reached. Fold in the chocolate chips. Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Use a shamrock-shaped cookie cutter to cut out cookies and place them on the prepared baking sheet. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
