Ingredients: 1 cup all-purpose flour. 1/2 cup sugar. 1 tsp baking powder. 1/4 tsp baking soda. 1/4 tsp salt. 1/2 cup almond milk. 1/4 cup unsweetened applesauce. 1 tsp vanilla extract. 1/2 cup fresh blueberries. 1 tbsp lemon zest. 2 tbsp melted coconut oil. 1/2 cup powdered sugar for glaze. 1-2 tbsp almond milk for glaze.
Instructions: Preheat oven to 350F 175C. Grease a doughnut pan with coconut oil. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, mix almond milk, applesauce, vanilla extract, lemon zest, and melted coconut oil. Pour wet ingredients into dry ingredients and stir until just combined. Gently fold in blueberries. Transfer batter to a piping bag or a ziplock bag with the corner cut off. Pipe batter into the prepared doughnut pan, filling each cavity about 2/3 full. Bake for 12-15 minutes, or until the doughnuts spring back when lightly touched. Remove from oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. For the glaze, whisk together powdered sugar and almond milk until smooth. Dip cooled doughnuts into the glaze, then place them back on the wire rack to allow excess glaze to drip off.
