Vegan Stuffed Avocados
The creamy avocado and flavorful seafood in these Seafood Stuffed Avocados go well together. They look great as an appetizer or as a light meal.
Ingredients: 2 ripe avocados. 1/2 cup cooked shrimp, chopped. 1/2 cup lump crab meat. 1/4 cup mayonnaise. 1 tablespoon lemon juice. 1/4 teaspoon garlic powder. Salt and pepper to taste. 2 tablespoons chopped fresh parsley. Lemon wedges for garnish.
Instructions: Cut the avocados in half and remove the pits. In a bowl, mix together chopped shrimp, lump crab meat, mayonnaise, lemon juice, garlic powder, salt, pepper, and chopped parsley. Scoop out a little avocado flesh from each half to create more space for the filling. Fill each avocado half with the seafood mixture, dividing it evenly among them. Garnish with additional chopped parsley and serve with lemon wedges.
