Creamy dairy-free vanilla ice cream is sandwiched between layers of homemade cookie dough studded with dairy-free chocolate chips, creating a deliciously satisfying dessert that's perfect for any occasion.
Ingredients: 1 cup almond flour. 1/4 cup coconut flour. 1/4 cup coconut oil, melted. 1/4 cup maple syrup. 1 teaspoon vanilla extract. Pinch of salt. 2/3 cup dairy-free chocolate chips. 4 cups dairy-free vanilla ice cream.
Instructions: Melted coconut oil, maple syrup, vanilla extract, and a pinch of salt should all be mixed together in a bowl. Mix until you get a dough. Add chocolate chips that don't contain dairy to the dough. Put parchment paper on the bottom of a baking sheet. In a flat surface, about 1/4 inch thick, press out half of the cookie dough. Freeze the baking sheet for 30 minutes to make the dough firm. After the dough has cooled, take it out of the freezer and spread vanilla dairy-free ice cream over it in an even layer. Carefully put the last of the cookie dough on top of the ice cream and press it down gently to make a sandwich. Do not take the baking sheet out of the freezer until the ice cream is completely set. This should take at least two hours. To serve, cut the sandwich into pieces with a sharp knife after it has been frozen. You can serve it right away or put leftovers in the freezer in a container that won't let air in.
