For lazy days, here's a quick and easy way to make stuffed cabbage soup. All the comforting tastes without having to stuff each cabbage leaf separately.
Ingredients: 1 lb ground beef. 1 cup rice, uncooked. 1 small cabbage, shredded. 1 onion, diced. 2 cloves garlic, minced. 1 can 28 oz diced tomatoes. 4 cups beef broth. 1 teaspoon dried oregano. 1 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil. Fresh parsley for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Add the minced garlic and diced onion and saut until the garlic smells good. Put in the ground beef and cook it until it turns brown. Add the shredded cabbage and cook until it starts to wilt a bit. Put in the beef broth and diced tomatoes. Keep the heat low. Put in oregano, paprika, salt, and pepper along with the uncooked rice. Let it cook for 20 to 25 minutes, or until the rice is done. If necessary, change the seasoning. Serve hot with fresh parsley on top.
