Ingredients: 1 large cabbage. 1 cup cooked rice. 1 cup cooked lentils. 1 onion, finely chopped. 2 cloves garlic, minced. 1 carrot, grated. 1/2 cup diced tomatoes. 1 teaspoon paprika. 1/2 teaspoon cumin. Salt and pepper to taste. 2 cups tomato sauce. 1/2 cup vegetable broth. 1/4 cup chopped fresh parsley. 1/4 cup grated Parmesan cheese optional.
Instructions: Bring a large pot of water to boil. Carefully remove the cabbage leaves and blanch them in boiling water for about 2-3 minutes until they soften. Remove and set aside to cool. In a large mixing bowl, combine cooked rice, cooked lentils, chopped onion, minced garlic, grated carrot, diced tomatoes, paprika, cumin, salt, and pepper. Mix well to create the stuffing mixture. Take each cabbage leaf and place a spoonful of the stuffing mixture in the center. Fold the sides of the cabbage leaf over the stuffing and roll it up to create a cabbage roll. Repeat this process with all the leaves and stuffing. In a large pot, combine tomato sauce and vegetable broth. Place the cabbage rolls seam-side down in the pot. Bring the sauce to a simmer. Cover the pot and let the cabbage rolls simmer for about 25-30 minutes, or until the cabbage is tender and the filling is heated through.
