A Taste of Epcot, Recipe 1: Leftover Stuffing Waffles
About a week ago, I received the “A Taste of Epcot: Festival Food From Around the Globe” cookbook, and promised I would be veganizing my way through it. I decided to start this project off today on Black Friday with the most seasonally appropriate recipe - Leftover Stuffing Waffles.
This recipe, which is found on page 37 of the cookbook, is a great way to use up some of your Thanksgiving leftovers.
The first ingredient this recipe calls for is leftover stuffing. The recipe also calls for the stuffing to be mixed with eggs to create a batter. Instead of eggs, I used unsweetened soymilk; however, vegetable broth will work just as well. I added a bit more liquid because my stuffing was a bit dry. This gave it a nice slightly, lumpy batter consistency.
This recipe turned out great, much better than I would have anticipated. I'm not the biggest fan of stuffing, and leftover stuffing especially is often kind of dry and bland, but adding some extra liquid and cooking it on the waffle iron definitely gave it new life. It had a nice, hot and fluffy interior, with a crispy coating on the outside. I served up my waffle with leftover vegan turkey roast, cranberry sauce, and gravy. If you're tired the usual turkey sandwiches after Thanksgiving, I can't recommend trying this recipe highly enough!

Leftover Stuffing Waffles - Serves 2
Ingredients:
2 1/4 cups of leftover stuffing, crumbled
1 1/2 cups unsweetened soymilk or vegetable broth
Instructions:
1. Preheat waffle iron.
2. Mix leftover stuffing with soymilk or vegetable broth.
3. Spray top and bottom of waffle iron with cooking spray.
4. Spread stuffing mixture evenly onto the waffle iron plate.
5. Close and cook until the waffles are firm and golden brown, approximately 10-15 minutes, depending on your waffle iron.
6. Serve with other Thanksgiving leftovers: vegan turkey, gravy, and cranberry sauce!
