In Europe to classify something as #Sugar_Free it must have less than 0,5% of Sugar inside. So, even creating a really special recipe, if we talk about #GELATO is impossible to make a Sugar-Free recipe: you will always have at least some #Lactose, that is #sugar! In Europe, the only way to have a Sugar-Free product is to make a #SORBET, using water (or vegetal milk), fibres (inulin, bamboo, lemon, etc..) and #polyalcohols (maltitol, sorbitol, erythritol, isomalt, etc..). If you want to make Gelato, with milk and cream, you can make a recipe with #LOW_SUGAR_CONTENT, that in Europe means that it has less then 5% of sugars. In this case, without adding any other sugar, you can create your recipe of gelato with milk, cream, fibres and polyalcohols, and sell it.
