Chef John's Stuffed Summer Squash A summer evening's meal should include summer squash, goat cheese, and merguez sausage.

Garlic Roasted Summer Squash Sliced spears of summer squash bake until browned with olive oil and garlic for the easiest side dish ever.
Garden zucch; it was a bit large so I used the zester to remove just a bit of the rind, and yellow squash and one red jalapeno (both also from the garden).
A bit of olive oil; sautéed and lightly browned, then just a bit of Italian seasoning, and granulated garlic.
I find the #7 size skillet (this one is apparently a "Best Made" brand - made for Sears R&Co by Griswold) pan that seems to be the perfect size for cooking for two with just a bit of leftovers for tomorrow's lunch. The metal spatula is best for this cookware as it perfectly scrapes the surface clean without scratching it - wood and plastic spatulas sometimes leave just a bit behind which ends up sticking and burning, especially when frying somewhat sticky stuff like potatoes.
