Instant Noodle Chicken Ramen Stir-fry

I drew this years ago, and it still makes me grin.
Especially now that I know how jawas react to getting to eat a giant egg. They would go hog wild for a vegetable that’s approximately 1/5 their body weight.

Today I attempted to make yakisoba.
My fridge was becoming bare so I had to improvise on many ingredients.
1 Green Bell Pepper
1 Onion
2 Small zucchinis
2 Small carrots
6 leaves of napa cabbage (substitute for bokchoi)
4 Too Ramen Noodles
I'm cooking for family of 5.
Yakisoba Sauce:
4 Tbs Worcestershire Sauce
4 Tbs Oyster Sauce
2 Tbs Ketchup
2 Tbs Soy Sauce
&
Crushed Dried Seaweed and sesame seeds for garnish
Recipe I looked up called for sugars but decided to omit it. Onion, carrots, cabbage & ketchup all make the recipe sweet enough for me.
First, stir fry hard veggies like carrots and zucchinis.
Then add in soft veggies: onions and bell peppers
Next the cabbages.
Prepared sauce over the veggies.
While stir frying the veggies, boil Top Ramen noodles beside it.
Timing is important. Overcook and I'll end up with mushy noodle.
Continue to stir veggies.
Strain water out of noodle....
Add in to the wok.
Keep stirring gently.
Voila! A yakisoba... sort of.
Top it off with dried seaweed and sesame seeds. And enjoy.
I thought of shrimp I had in my freezer too late.
Well maybe next time.
Light.
You’re like a flame.
Somehow simultaneously like the soft glow and light of a candle..
And yet the cozy warmth of the fire in a fire place.
The soft pink and purple of an early morning sunrise, peacefully fending off the darkness of night. Bringing the promises of a new day and many more in the near and distant future.
Like the slight flickering of stars. The pictures they paint. The gorgeous bits of hope among a deep, and beautiful dark sky.
But also the moon, who controls the tides. Who is much much more important than people give it credit for. Much more loving, accepting. If only people would make the effort to stay out late enough to be able to appreciate it fully.
Like the flicker of light off of loving eyes.
The light reflected off of water.
And I see a bit of you in every one of these things.
You’ve brought your light to my life.
Given me hope.

When I watered the zucchinis Saturday I thought "I will pick them Monday when I'm off work". Well, they got huge on me in the span of two days. I will be chopping them up today to freeze to can into pickles and relish at a later time. Also some bonus tomatoes I picked. I am thinking about using those for some tomato and zucchini pasta sauce later.
