Indulge in the delightful combination of caramelized roasted peaches and creamy coconut milk in this homemade ice cream. Perfect for a hot summer day or any time you crave a refreshing treat!
Ingredients: 4 ripe peaches, halved and pitted. 2 tablespoons brown sugar. 1 can 13.5 oz coconut milk. 1/2 cup granulated sugar. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: Warm the oven up to 190C 375F. Half the peaches and put them on a baking sheet that has been lined with parchment paper. Cut side up. Put brown sugar on top of the peaches. After the oven is hot, roast the peaches for 25 to 30 minutes, or until they are soft and caramelized. Take out of the oven and let cool all the way down. Put the peach flesh into a blender or food processor after it has cooled down. Grass sugar, vanilla extract, salt, and coconut milk should all be added to the blender. Mix until it's creamy and smooth. Put the mixture into an ice cream maker and churn it according to the directions on the machine. Put ice cream that has been churned into a container and freeze it for at least 4 hours, or until it is firm. Put scoops of ice cream into bowls or cones to serve.
