How wide would the Sunset Sea have to be for it to be realistic that Swan Ships would find it impassable for so long? European caravels managed to circumnavigate the world so would it not have to be wider than the Pacific with no major landmasses?
Depending on the cargo capacity of the swanships, quite far indeed. However, if there's magical things that influence the wind (since magic already influences the seasons), then if they couldn't sail west (or couldn't sail back), it could actually not need to be large. Ultimately, I think the answer is Doylist - GRRM admits that he wants west of Westeros to be terra incognita, a place on the maps marked as "Here Be Winged Men." So he writes down as author fiat "no one comes back from the Sunset Sea," and we go no further.
