My parents sent me an express mail package 😲😨😲😨 with one of my favorite fruits ever. (Did you see the postage?) Since I had surgery they want me get healthy nutrients to have a better recovery. So of course I had to make some juice 😊. Got 2 gallons of wonderful homegrown guanábana (sour sop). They also sent me the leaves to make wonderful tea. 2/7/18

Goji berries have been used in traditional Chinese medicine for over 2,000 years. Now it’s time to introduce them to your pasta. This super fruit is a two for one ingredient adding nutritional benefits and decadent flavor to your dish.

Saffron Orzo with Goji Berry-Pistachio Pesto

Serves: 8

Prep Time:  15 minutes

Cook Time:  7 minutes

Ingredients

4 cups water

8 strands saffron (½ teaspoon)

1 pkg. (1 lb.) Barilla® Orzo

1 cup goji berries

½ cup roughly chopped red onions

½ cup toasted pistachios

1 clove garlic

2 tablespoons olive oil

2 tablespoons orange zest

2 tablespoons orange juice

1 tablespoon roughly chopped dill

1 tablespoon roughly chopped tarragon

Directions:

1. Add water and saffron to large pot. Bring to boil. Add orzo; cook on medium-high heat 7 min. Remove from heat; cover to keep warm.

2.Combine remaining ingredients in food processor. Pulse until mixture is slightly chunky but not pureed.

3. Add pesto to orzo; mix well. Season to taste with kosher salt.

 Ingredient Tip: Goji berries are native to the Himalayas and an excellent source of antioxidants. Look for them in the dried fruit or bulk food section of the grocery store, or in health food stores.

Serving Suggestion: Garnish with additional chopped pistachios and fresh tarragon.

I won’t lie, Luna and Amber have some of the most random activities and as much as I hate SM for not being more organized with them, I sometimes appreciate it. I mean, if SM pushed them like the rest of their idols, we might not have things like Luna singing with international Youtubers for a Hugh Jackman movie or Amber acting in an indie golf-movie or featuring with members of Pentatonix. In the long run, it might not be getting them more popular in Korea, but they’re growing networks and fanbases outside of the traditional Kpop scope, and I think that’s pretty cool!
