Ingredients: 2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 3/4 cup unsalted butter, softened. 3/4 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. Blue and green food coloring. Royal icing blue, white, green. Edible sanding sugar optional.
Instructions: In a bowl, whisk together the flour, baking powder, and salt. In another bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Divide the dough into two portions. Add blue food coloring to one portion and green food coloring to the other, kneading until the colors are evenly distributed. Wrap each colored dough in plastic wrap and chill in the refrigerator for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Roll out the chilled dough on a floured surface to about 1/4-inch thickness. Use surfboard and wave-shaped cookie cutters to cut out the cookies. Place the cookies on the prepared baking sheet and bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool completely on a wire rack. Prepare the royal icing by following the package instructions and dividing it into blue, white, and green colors. Decorate the cooled cookies with the royal icing, creating surfboard and wave designs. Sprinkle edible sanding sugar on the wave designs for added texture and sparkle optional. Allow the icing to set before serving or packaging.
