Ingredients: 1.5 kg pork belly, skin-on. 2 tablespoons olive oil. 1 teaspoon sea salt. 1/2 teaspoon black pepper, freshly ground. 1/2 teaspoon Chinese five-spice powder. 2 pears, peeled, cored, and sliced. 1 cup apple cider vinegar. 1/2 cup brown sugar. 1 teaspoon mustard seeds. 1/2 teaspoon red pepper flakes. Fresh thyme sprigs for garnish.
Instructions: Preheat the oven to 220C 430F. Score the pork belly skin in a crisscross pattern. Rub the skin with olive oil, sea salt, black pepper, and Chinese five-spice powder. Place the pork belly on a wire rack in a roasting pan. Roast in the preheated oven for 30 minutes. Reduce the oven temperature to 180C 350F and continue roasting for 1.5 to 2 hours or until the pork belly is crispy and cooked through. While the pork is roasting, combine pears, apple cider vinegar, brown sugar, mustard seeds, and red pepper flakes in a saucepan. Bring to a simmer and cook for 20-25 minutes until the pears are pickled. Allow to cool. Once the pork is done, let it rest for a few minutes before slicing into serving portions. Serve the crispy pork belly slices with cider pickled pears, garnished with fresh thyme sprigs. Enjoy the delightful combination of crispy pork and tangy pickled pears!
