MINI-OVERVIEW: Swedish Princess Cake (Prinsesstårta) is a classic Scandinavian torte with layers of sponge cake, raspberry jam, vanilla custard, and whipped cream. It is traditionally dome-shaped and covered with a layer of sweet marzipan tinted green.
SHORT HISTORY: "Prinsesstårta has its origins in the 1920’s with Jenny Akerstrom, a Swedish home economics guru who was an instructor to the three daughters of Prince Carl, Duke of Vastergotland: the Princesses Margaretha, Martha and Astrid. The cake was renamed Princess Cake rather than Gron Tarta or Green Cake because the Princesses loved the cake so much. Currently, the cake is baked all over Sweden and is popular for special occasions."

simple tuppkaka <3
ingredients: for one cake made in a circular tin measuring approx. 25 cm / 10 inches across
75 g / 0.3 cup - butter
3 dl / 1.25 cups - sugar
2 eggs
2.5 dl / 1 cup - flour
1.5 dl / 0.6 cup - fresh red currants (but any kind of berry will do)
a bit of almond flakes
+ a bit of butter and breadcrumbs to line the pan
1. set the oven to 200 C° / 392 F° (normal setting, for hot air temp. needs adjusting)
2. melt the butter on the stove, when melted remove from heat. stir in the sugar and eggs.
3. stir in the flour, and stir so the batter is smooth
4. pour in oven-safe, lined, pan. spread the berries evenly on top, and spread almond flakes on top of these. (i gently press the berries down in the batter, but that's a personal preference)
5. bake low in the oven for 20-25 minutes
notes: i'm not very exakt on the measurements when i bake it, so don't worry about measuring perfectly. the cake is slightly gooey and sweet, and pairs well with currants (which are slightly sour berries). tuppkaka means rooster-cake <3

Swedish Princess Cake, Prinsesstårta
Kladdkaka (Swedish Gooey Chocolate Cake)
Makes: 8 pieces Prep time: 5 min Cook time: 20 min
Ingredients
200 grams (7-ounces or 1 3/4 sticks) butter, plus extra to grease
Breadcrumbs, to coat
200 grams (7-ounces) dark (semisweet) chocolate, broken into small pieces
4eggs
25 0grams (9-ounces or 1 1/4 cups) sugar
40 grams (1 1/2-ounces or 1/3 cup) weak (soft) wheat flour*
A good pinch of sea salt
* Feel free to swap in all-purpose or cake flour, if it's what you have on-hand.
Directions
Preheat the oven to 175ºC/345ºF/Gas Mark 4. Butter a 24-cm/9 1/2-inch springform cake pan and coat with breadcrumbs.
Melt the butter in a medium pan over low heat. Add the chocolate and keep melting everything together while stirring. Remove the pan from the heat and add the rest of the ingredients while you keep stirring until well combined.
Scrape the batter into the prepared cake pan, smooth the surface and bake for 15 to 20 minutes. It should be sticky on the inside. If the cake gets too dark, cover it with aluminum foil for the last 5 minutes.
