Peach Flip Twist
What you need:
16 oz. of frozen peaches
4 1/2 cups of sprite or lemon lime soda
4 1/2 cups of lemonade
Mix together and let set so all the flavors blend together! Yummy!
Ratatouille with Smoked Sausage
WHAT YOU NEED:
smoked sausage, chopped into bite size pieces
3 potatoes, chopped into bite size pieces
1 eggplant, chopped into bite size pieces
2 crookneck squash, chopped into bite size pieces
1 zucchini squash, chopped into bite size pieces
1 onion, chopped
3 cloves garlic, minced
2 bell peppers, chopped into bite size pieces
1 28 oz. can of diced tomatoes
1 bay leaf
a pinch of parsley, thyme, basil
salt and pepper
Saute onion, garlic and potatoes on medium heat in oil or butter about 5-7 minutes.
Add green peppers. Saute another 5 minutes.
Add zucchini squash and yellow squash. Cook for about 3 minutes.
Add eggplant and sausage. Salt well and stir.
Add can of tomatoes, bay leaf, parsley, thyme, basil, and pepper.
Reduce to low heat and cook for 10 minutes.
Roasted Chicken and Vegetables Frittata
WHAT YOU NEED:
leftover roasted chicken and vegetables from earlier in the week
4 eggs
1 1/2 c. cheese
Put chicken mixture in the bottom of a pie plate
Cover with 1/2 cup of cheese
Mix eggs together in a bowl and pour over chicken and cheese
Cover with 1/2 cup of cheese
Bake in a 350 degree oven for 30 minutes.
Remove from oven, flip it over, cover with another 1/2 cup of cheese, bake for another 10-15 minutes.
Homemade Bread
WHAT YOU NEED:
1 lb. all-purpose flour
1 T. yeast
1 t. salt
1 c. warm water, or however much the dough needs
Mix the flour and salt together in a bowl.
Make a well in the flour and put the yeast in it.
Pour warm water into the yeast and mix it together with your fingers
Mix the flour into the yeast and water. Add more water as you need it.
Knead the dough and remove from bowl.
Wash the bowl and grease it.
Cover it with a cloth and let it rise.
Push it down and put it in a loaf pan.
Bake for 30 minutes at 350 degrees.

Slow-cooker Bean Soup with Smoked Sausage
WHAT YOU NEED:
1 lb. dry mixed beans
Smoked Sausage (whatever kind you want, and however much you want) *This would probably be good with crumbled sausage, hamburger, or leftover BBQ, just whatever you have on hand.
14 oz. can of diced tomatoes
1 onion, chopped
1 clove of garlic, minced
6 c. water
4 chicken bouillon cubes (if you don't have bouillon cubes, you can just 4 cups of chicken broth and just use 2 cups of water)
salt, pepper, Tiger seasoning, Italian seasoning, Mrs. Dash, and a little crushed red pepper (you can use whatever seasonings you like)
Go through the beans to make sure there aren't any rocks and soak them overnight.
Throw all the ingredients in the slow-cooker and cook for 6-8 hours.
No-fuss Fudge
I just had to share this fudge recipe with y'all! This has got to be the easiest, quickest, and pretty-freakin'-delicious-iest fudge I have ever made. There are two ingredients and you don't have to bake anything! It literally takes like 15 minutes from bag/can to the fridge.
WHAT YOU NEED:
3 c. semi-sweet chocolate chips
1- 14 oz. can of sweetened condensed milk
1. Pour chocolate chips into a double boiler. (If you want, y'all can use a microwave to melt the chocolate, but I prefer a double boiler; it makes me feel fancy.)
2. After the chocolate chips have melted (about 10 minutes), remove from heat and pour in the can of condensed milk.
3. Stir it up and pour the mixture into a lined (or not lined; whatever you prefer) 8x8 pan.
4. I used a spoon dipped in the hot water from the double boiler to smooth out the top and make it look pretty.
5. Cover it and stick it in the refrigerator, until it hardens. I'd give it a few hours.
Just so we're clear,
I am not cut out to be a cattle farmer's wife.
We just now--at 7:00 at night, in the rain--had to get a cow up in the stable and try to get her to let her calf nurse. She's been kicking at the calf and walking away from him every time he tries to nurse. Jes decided that we would get her in the stable and then she wouldn't be able to run away. Well, that worked out fine, until Jes kept touching her udders and made her mad. Then she was trying to JUMP out of the stable. I ran out of the way and then Jes opened up the doors and she ran out. He got her to calm down, but I was trying to get out of the fence.Then, the freaking bull calf came running after me!
I was scared to death. This is all new to me. And Jes keeps making me go out there at dark! I can feed and water them, but I'm not doing anything else..
..until the next time Jes asks for help.
