Country eatin'!
Tonight we're having some country eatin'. I'm makin' some lima beans in the Crock-pot, fryin' up some squash and servin' it with some cornbread.
LIMA BEANS:
Sort and soak a pound of beans overnight.
Put Lima beans in the Crock-pot with about four cups of water.
Add salt, pepper, and a chicken bullion cube.
Cook for 8 hours on LOW.
FRIED SQUASH:
Slice squash into circles.
Mix flour and cornmeal together in a gallon bag.
Add squash into bag and shake until coated.
Fry squash in vegetable oil, until golden brown.
CORNBREAD:
Mix 1 cup of self-rising cornmeal with 1 cup of self-rising flour and a teaspoon of salt and a 1/2 teaspoon of sugar in a large bowl.
Add 1 1/2 cups of buttermilk and 2 eggs and stir.
Pour mixture into a greased pan.
Cook at 425 degrees for about 20-25 minutes.
Here are some pictures of Catrina and Jes's cows!
Wendy and Minerva. Two of my faves!
Some of the herd roamin' around.
Mama cow (Fiona) and her day-old baby boy (Vinny).
Most of the herd out for an early morning snack.
Rotini Rosa

6 oz. dried rotini pasta
1 can diced tomatoes
2 T. minced garlic
1/2 t. crushed red pepper flakes
1 T. oil
6-8 mushrooms, sliced
2 c. fresh spinach
salt and pepper
Parmesan cheese
Bring water to a boil, salt, and add pasta.
Heat oil in a skillet.
Add garlic and red pepper flake and saute for a couple minutes.
Add mushrooms and tomatoes and saute for 5-7 minutes.
Add spinach and allow it to wilt for a few more minutes.
Add drained pasta.
Salt and pepper to taste.
Serve topped with Parmesan cheese.
Enjoy!
We ate ours with Cheesy Texas Toast. Jes loves Texas Toast, so that was the only way to get him to eat something that doesn't have ground beef in it. That man loves cattle anyway it comes, y'all.
Red Beans and Rice
WHAT YOU NEED:
6 oz. smoked sausage
1 1/2 c. rice
3 c. water
2 beef bullion cubes
1 green bell pepper, chopped
1 onion, chopped
1 can light red kidney beans
hot sauce and/or favorite seasonings
Pour water into a pot with beef bullion cubes.
Once it comes to a boil, reduce heat and add rice.
Cover and simmer for about 12 minutes.
Meanwhile, saute onion, peppers, and sausage.
Add onions to rice once it has cooked.
Then drain the kidney beans and add those too.
Then season it to taste with whatever you want. I used small amounts of Worcestershire sauce, hot sauce, tiger seasoning, paprika, salt, and pepper.
