A lovely quinoa salad that is both healthy and refreshing, with sweet pears and tart dried cherries. The walnuts and feta cheese give it a satisfying crunch and a creamy texture. This salad is great as a side dish or light meal because it is dressed in a simple balsamic vinaigrette.
Ingredients: 1 cup quinoa, rinsed and drained. 2 cups water. 1 ripe pear, diced. 1/2 cup dried cherries. 1/4 cup chopped fresh parsley. 1/4 cup chopped walnuts. 1/4 cup crumbled feta cheese. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Put the quinoa and water in a medium-sized saucepan. After it starts to boil, turn down the heat, cover, and let it cook for 15 minutes, or until the quinoa is done and the water is absorbed. Use a fork to fluff it up, then let it cool down. Diced pear, dried cherries, parsley, walnuts, and feta cheese should all be put in a large bowl together. Salt and pepper should be mixed with olive oil in a small bowl. Add the dressing to the quinoa and toss it all together. You can serve it right away or put it in the fridge for a few hours to let the flavors mix. If you want, you can add more parsley, walnuts, and feta as a garnish before serving.
