These paleo Cinnamon Almond Cookies are a healthy and tasty treat that's perfect for satisfying your sweet cravings while sticking to your paleo diet.
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/4 cup coconut oil, melted. 1/4 cup honey or maple syrup. 1 teaspoon vanilla extract. 1 egg. 1/4 cup chopped almonds optional, for extra crunch.
Instructions: Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a baking sheet with parchment paper. Mix together almond flour, coconut flour, salt, and ground cinnamon in a mixing bowl. Melted coconut oil, honey or maple syrup, egg, and vanilla extract should all be combined in a different bowl. Mixing until a dough forms, pour the wet ingredients into the dry ingredients. Add the chopped almonds for crunch if you'd like. Shape the dough into cookie shapes with spoonfuls and arrange them on the baking sheet that has been preheated. Using your fingers or the back of a fork, gently flatten each cookie, then add a little extra cinnamon for flavor on top. Bake for 12 to 15 minutes, or until the edges of the cookies are golden brown, in a preheated oven. Take them out of the oven and allow to cool for a few minutes on the baking sheet, then move them to a wire rack to cool down completely.
