These Paleo Gingersnaps are a delicious and healthier twist on the classic ginger cookie. Made with almond and coconut flours and sweetened with coconut sugar and molasses, they are perfect for those following a paleo diet or looking for a grain-free treat.
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/2 cup coconut sugar. 1 tsp ground ginger. 1/2 tsp ground cinnamon. 1/4 tsp ground cloves. 1/4 tsp salt. 1/4 cup coconut oil melted. 1/4 cup unsulfured molasses. 1 egg. 1 tsp vanilla extract. 1/4 cup coconut sugar for rolling.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, combine almond flour, coconut flour, 1/2 cup coconut sugar, ginger, cinnamon, cloves, and salt. In another bowl, whisk together melted coconut oil, molasses, egg, and vanilla extract. Gradually add the wet ingredients to the dry ingredients and mix until a dough forms. Chill the dough in the refrigerator for about 30 minutes to make it easier to handle. Form the dough into small balls and roll them in the remaining 1/4 cup of coconut sugar to coat. Place the coated dough balls on the prepared baking sheet and gently flatten each one with a fork or your fingers. Bake in the preheated oven for 10-12 minutes or until the edges are slightly golden.
