They don´t know it yet because of a technicality.
Let me explain how it works, it´s kinda bureaucratic:
So, my theory is that they didn´t get the call yet because the Michelin Guide for Chicago in 2023 was published in November, which Storer must be fully aware of, BUT 04x10 happened on 10/08/2023

So, since the Michelin guide that year, for the Chicago area, dropped on 11/07, they don´t know they are the winners yet. Just like Ever, during their first year of tenure.
That news is probably gonna be 05x01 material or in the first few eps of S5, for sure.

And let´s not forget that according to 04x10, Carmy´s retirement is not effective immediately; he´s planning on taking care of the debt first:

I always thought that when the star happens, it´s gonna be EXPLICIT Sydcarmy showtime! So... I believe Carmy when he says they´re gonna get a star and IK Syd will get it with her "More than perfect Scallop."🤌💋
