If you don't want to eat chicken, these easy tandoori vegetable kebabs are a tasty and healthy vegan option. These skewered vegetables are great for a quick meal during the week or as a party appetizer that everyone will enjoy. They are marinated in a tasty mix of vegan yogurt and spices.
Ingredients: 1 cup cauliflower florets. 1 cup cubed bell peppers assorted colors. 1 cup cubed zucchini. 1 cup cubed red onion. 1 cup cherry tomatoes. 1/2 cup vegan yogurt. 2 tablespoons tandoori masala. 1 tablespoon lemon juice. 1 tablespoon minced ginger. 1 tablespoon minced garlic. Salt to taste. 2 tablespoons oil.
Instructions: Turn on the oven and heat it up to 400F 200C. It's easy to make the marinade: put vegan yogurt, tandoori masala, lemon juice, minced ginger and garlic, and salt in a large bowl. Bell peppers, zucchini, red onion, cherry tomatoes, and cauliflower florets should all be added to the marinade. Mix well so that all the vegetables are covered. Put skewers of vegetables that have been marinated on them, switching between different kinds of vegetables. Stick the vegetables on skewers and coat them with oil. Then, put them on a baking sheet that has parchment paper on it. Put the vegetables in an oven that has already been heated and bake for 20 to 25 minutes, or until they are soft and slightly charred. Add fresh cilantro leaves and lemon wedges on top while the food is still hot.
