This Dijon Potato Salad is a tasty take on regular potato salad. It has the earthy flavors of mushrooms and the sweetness of caramelized onions, all mixed together in a tangy Dijon mustard dressing.
Ingredients: 1 lb potatoes, diced. 1 cup sliced mushrooms. 1 onion, thinly sliced. 2 tbsp Dijon mustard. 2 tbsp olive oil. 1 tbsp apple cider vinegar. Salt and pepper to taste. 2 tbsp chopped fresh parsley.
Instructions: Boil the diced potatoes until tender, then drain and let cool. In a skillet, heat olive oil over medium heat. Add sliced mushrooms and onions, saut until caramelized. In a large bowl, whisk together Dijon mustard, apple cider vinegar, salt, and pepper. Add cooked potatoes, mushrooms, onions, and chopped parsley to the bowl with the dressing. Toss gently to coat evenly. Refrigerate for at least 30 minutes before serving to allow flavors to meld. Garnish with additional parsley before serving.
