Topping spinach salads with this hot bacon salad dressing is a great idea. The warm, savory dressing with a touch of sweetness from the brown sugar goes well with the fresh spinach leaves. Easy to make, this salad tastes great and makes you feel good.
Ingredients: 4 slices of bacon. 1/4 cup finely chopped onion. 1/4 cup apple cider vinegar. 2 tablespoons brown sugar. 1 teaspoon Dijon mustard. Salt and pepper to taste. 6 cups fresh spinach leaves.
Instructions: Cook the bacon in a skillet over medium heat until crispy. Remove and crumble it, then set aside. In the same skillet, saut the chopped onion until it becomes translucent in the bacon drippings. Add the apple cider vinegar, brown sugar, Dijon mustard, salt, and pepper to the skillet. Stir well and simmer for 2-3 minutes until the mixture thickens slightly. Remove the skillet from heat and let the dressing cool for a few minutes. Place the fresh spinach leaves in a salad bowl. Pour the warm bacon dressing over the spinach leaves and toss gently to coat. Sprinkle the crumbled bacon over the top of the salad. Serve immediately while the dressing is still warm.
