With this grilled chicken recipe, you can taste the strong and fragrant flavors of Morocco. Adding a touch of citrus to the mix of spices makes for a delicious dish that is perfect for barbecues.
Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup olive oil. 3 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1 teaspoon paprika. 1 teaspoon ground cinnamon. 1/2 teaspoon cayenne pepper. Salt and black pepper to taste. Juice of 1 lemon. 2 tablespoons chopped fresh cilantro. 2 tablespoons chopped fresh parsley.
Instructions: Mix cumin, coriander, paprika, cinnamon, cayenne pepper, salt, and black pepper with olive oil in a bowl to make the marinade. Pour half of the marinade over the chicken breasts in a plastic bag that can be closed again. Put the bag in the fridge for at least 30 minutes, or overnight for better taste. Warm up the grill over medium-high heat. Take the chicken out of the bag that it was in and throw away the marinade. Grill the chicken for 6 to 8 minutes on each side, or until it's fully cooked. While it's cooking, baste it with the rest of the marinade. Before you serve the chicken, drizzle it with lemon juice and top it with chopped cilantro and parsley.
