Ingredients: 1 lb shrimp, peeled and deveined. 1 onion, diced. 1 green bell pepper, diced. 2 stalks celery, diced. 3 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 2 cups chicken broth. 1 tsp Cajun seasoning. 1/2 tsp dried thyme. 1/2 tsp dried oregano. 1/4 tsp cayenne pepper. Salt and pepper to taste. 2 tbsp vegetable oil. 2 tbsp all-purpose flour. 2 tbsp chopped parsley, for garnish.
Instructions: Put vegetable oil in a large pot and heat it over medium-low heat. Slice the onion, bell pepper, and celery and add them. For about 5 minutes, or until softened, saut. Cut up some garlic and add it. Cook for one more minute. Put flour on the vegetables and mix them around to cover them all. Do this for two minutes. Add the chicken broth and diced tomatoes and stir to mix. Put thyme, oregano, cayenne pepper, salt, and pepper on top of the food. Lower the heat and let the stew cook for 10 minutes, stirring every now and then. It will take about 34 minutes of cooking after adding the shrimp until they are pink and opaque.
