This Cheeseburger Soup tastes just like a regular cheeseburger, but it's hearty and comforting. It's great for a cozy dinner on a cold night.
Ingredients: 1 lb ground beef. 1 onion, diced. 2 cloves garlic, minced. 4 cups beef broth. 2 cups diced potatoes. 1 cup diced carrots. 1 cup diced celery. 1 can diced tomatoes. 1 cup milk. 2 cups shredded cheddar cheese. Salt and pepper to taste. 1/4 cup chopped fresh parsley. 1/4 cup sour cream optional.
Instructions: Over medium-low heat, brown the ground beef in a large pot until it's fully cooked. Get rid of extra fat. Dice the garlic and onions and put them in the pot. Cook the onions until they become clear. Add the beef broth, carrots, celery, potatoes, and tomatoes that have been cut up. Bring to a boil, then lower the heat and let it cook for 20 minutes, or until the vegetables are soft. Add milk and cheddar cheese shreds and stir until cheese melts and soup becomes creamy. Add pepper and salt to taste. Add chopped parsley on top and serve hot. Add a dollop of sour cream on top if you want to before serving.
