Anzac Biscuits are a classic Australian treat with a history dating back to World War I. These delicious and chewy cookies are made with rolled oats, coconut, and golden syrup, offering a perfect blend of flavors and textures.
Ingredients: 1 cup rolled oats. 1 cup all-purpose flour. 1 cup desiccated coconut. 3/4 cup brown sugar. 1/2 cup unsalted butter. 2 tablespoons golden syrup. 1/2 teaspoon baking soda. 2 tablespoons boiling water.
Instructions: Preheat the oven to 350F 175C and line baking sheets with parchment paper. In a large mixing bowl, combine rolled oats, all-purpose flour, desiccated coconut, and brown sugar. In a small saucepan, melt the unsalted butter and golden syrup over low heat. Dissolve baking soda in boiling water and add it to the melted butter mixture. It will foam up. Pour the butter mixture into the dry ingredients and mix well until combined. Using your hands, shape tablespoons of the mixture into balls and place them on the prepared baking sheets. Flatten slightly with a fork. Bake in the preheated oven for 10-12 minutes or until the biscuits are golden brown. Remove from the oven and let the biscuits cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
