Mojo Pork Kebabs are a tasty and sour take on regular pork kebabs. The citrusy mojo marinade gives the pork a great flavor, which makes these kebabs a great addition to a summer cookout or barbecue.
Ingredients: 2 pounds boneless pork shoulder, cut into 1-inch cubes. 1/2 cup fresh orange juice. 1/4 cup fresh lime juice. 3 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon dried oregano. 1/2 teaspoon paprika. Salt and pepper to taste. 2 bell peppers, cut into chunks. 1 red onion, cut into chunks. Wooden skewers, soaked in water.
Instructions: In a bowl, combine the fresh orange juice, fresh lime juice, minced garlic, ground cumin, dried oregano, paprika, salt, and pepper to make the mojo marinade. Place the pork cubes in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours or overnight for best results. Preheat your grill to medium-high heat. Thread the marinated pork cubes, bell peppers, and red onion chunks onto the soaked wooden skewers, alternating the ingredients. Grill the kebabs for about 10-12 minutes, turning occasionally, until the pork is cooked through and has a nice char on the outside. Serve the mojo pork kebabs hot with your favorite side dishes. Enjoy these flavorful and tender pork kebabs with a touch of citrusy mojo sauce!
