A delightful and nutritious quinoa dish with a unique blend of toasted nuttiness, savory mushrooms, and vibrant Asian flavors. Perfect for a quick and wholesome meal!
Ingredients: 1 cup quinoa, rinsed and drained. 2 cups mushrooms, sliced shiitake or cremini. 2 cloves garlic, minced. 1 tablespoon sesame oil. 1 tablespoon soy sauce. 1 tablespoon rice vinegar. 1 teaspoon ginger, grated. 2 green onions, chopped. 1 tablespoon sesame seeds, toasted. Salt and pepper to taste.
Instructions: Toast the quinoa over medium-low heat in a dry skillet until it turns golden brown and smells good. Set aside a different pan and heat the sesame oil over medium-high heat. When you add the mushrooms, cook them until they give off their water and turn golden brown. When you add the minced garlic and grated ginger to the mushrooms, cook for one more minute until the mushrooms smell good. The soy sauce, rice vinegar, and toasted quinoa should all be mixed in. Let the flavors blend for two to three minutes. Add pepper and salt to taste. Before serving, top with chopped green onions and toasted sesame seeds.
