Experimented with tea at 2AM this morning. I have come to like bitter tea, oddly enough. The bitterness is awful but I like it for some reason. Also tea with honey isn't as bad as I thought it was? (I'm a loyal sugar user lol)
finally (f i n a l l y) went out and bought a bunch of whole spices, and have now successfully made my first batch of homemade chai concentrate!
notes for next time:
bit less black pepper?
more ginger (i.e. an actual amount, not just "the small thumb left over in the freezer")
steep everything longer (>10 min for spices, slightly >5 min for tea)
get more loose leaf assam next time I'm buying tea
do I want to make the effort to grab some star anise? maybe
maybe use actual measuring tools for the honey and sugar so I can write down a specific amount for the future
used this time:
5c water
5 english breakfast teabags (steeped at just under boiling)
2 cinnamon sticks
~15 cloves
~12 cardamom pods
1 tbsp black pepper
1/4 tsp nutmeg
~1/4 inch of a vanilla bean
small amount of leftover freezer ginger
approx 1/4c honey and a few tbsp(?) brown sugar
then about a 3:2 ratio of concentrate to whole milk to get to the flavor level I was looking for
(context: trying to replicate the Trader Joe's bottled concentrate's level of Punch You In The Face at a similar liquid ratio, with fewer plastic bottles and ideally more concentrate available in one go)
I decided to try this cinnamon chamomile ginger tea because I feel like sluggish and in need of cleanse and it's actually working. Yogi tea, you have proved yourself good in both anxiety soothing and cleansing tea and while they're not the best tasting teas I am content with the results.
